Love Salmon? Love Burgers? Try These!

Today was a bit of a rough day. Making things better? Laura Pensiero’s low-fat, tasty salmon burgers! See page 148 of the Oprah Magazine Cookbook or click here. The recipe calls for 1 lb of skinless wild salmon fillet and makes 4 burgers. I picked up 1.5 lbs of coho fillet and made 3 big burgers instead! My only other variation to this recipe was substituting extra sesame oil for the peanut oil, which I couldn’t readily find. These burgers (now, was it the Mission Hill talking?) were delicious! Definitely a make again. Another plus? I’ve discovered my fantasy bottle of wine…the 1.5 litre 2004 Oculus from Mission Hill, available for $160 from the wine shop from Metrotown. Um, yeah! šŸ˜‰

    Tasty burgers. They need something to hold them together a little better though. Anyone have any ideas? Maybe we just didn’t chop the salmon up enough?

      They were tasty! I just had the last patty broken up and sprinkled on greens for a lunch-time salad. Yum! Come to think of it, maybe it was the addition of that extra 1/2 lb of salmon that made the burgers not stick together as well as they might have. I’d love to hear other thoughts & suggestions, though šŸ™‚
