Give This Delicious Seasonal Soup a Try

As a longtime soup lover, it’s honestly a bit hard to find a new soup recipe that really impresses me. This is it! Rori Trovato’s Spiced Butternut Squash & Apple Soup with Maple Pumpernickel Croutons is absolutely delicious. See page 70 of The Oprah Magazine Cookbook or click here.

Spiced with fennel seeds, cinnamon, and ground cardamom, this velvety smooth blend of butternut squash and McIntosh apples is a great seasonal comfort food.

Perfect for chilly evenings, this soup would also be a good asset at a fall picnic lunch. My mind’s now conjuring up a family “Country Living photo shoot” replete with plaid blankets, crisp coloured leaves (wait, maybe this fantasy is taking place in Ontario ;)) and cozy, stylish sweaters.

Yes, armed with this recipe, I think I now have everything I need to make my fantasy photo shoot come true. Handsome husband? Check. Awesome kid? Check. Happy dog? Check. Access to brilliant photographer Sean Norman? Check.

Okay, back to the present moment…

In addition to the wonderful taste & texture of the soup itself, the maple pumpernickel croutons are a great, arguably indispensable complement. Consisting simply of 1/2 inch chunks of toasted pumpernickel tossed with olive oil, maple syrup, minced chives (for which I substituted green onions), and salt & pepper, these croutons are tasty and easy to make. Chad loves them.

So, if you’re hankering after a new seasonal soup recipe, I suggest you give this winning one a try.

    sounds yummy – like the fennel seeds. I see sitting in front of a warm fire (in Quebec) with soup and croutons, snow falling on frozen lake….

      Mary, that sounds heavenly too. I think you guys would really like this soup. It reminds me of one I had that you made a long time ago, it had a yummy red swirl on top. Do you remember what that was? 🙂
